Eastern Carolina Parent - April 2009 - (Page 11) Cucumbers should be picked while they are young to encourage more fruit. We chose the Ashley Cucumber, which was perfect for salads, pickling, and putting into vinegar for a quick snack. Straight neck squash and zucchini will reward you with prolific daily harvest once they are at their peak. Use a sharp knife to cut your gourds and to encourage new growth. We grew bush beans in the Romano variety. They were only three to four inches in length but had a continuous production for a month. There is a wide range of peppers to consider for the garden. We chose three sweet green pepper plants, one habanero plant for Rodney, who likes very hot peppers, and two cayenne bushes for pepper vinegar and garnishes. Pepper plants and tomato plants should be planted several feet apart and in different rows each year because they are subject to the same Mosaic Virus. I love fresh herbs so that was an area in our garden that I did not want to forget. We use mint, which is perfect for a tall glass of lemonade or specialty drink. Basil, parsley, and oregano all are a great addition to any home cooked meal. I loved being able to go out to the garden while my dinner was on the stove and use fresh herbs to add a bit of spice to that night’s dinner. Gardening is a real challenge but well worth the end result. The key to success is to know your growing conditions and carefully choose your plants.
